Omurice: Japanese Omelette Rice Recipe to Make At Home

Omurice (オムライス), also known as Japanese omelette rice, is a beloved homemade dish that has gained popularity worldwide.

Originating in Japan, this delightful recipe marries the flavours of fried rice and a delicate omelette, creating a comforting and flavourful meal that is both satisfying and easy to make at home. 🍳🍚

Ingredients (Serves 1)

Filling:

  • 3 tbsp vegetable oil, divided
  • 1/2 green onion (white parts)
  • 1/4 onion, diced
  • 1/4 cup (30 g) carrot, diced
  • 100g of your choice of meat or veggies
  • 2-3 (50 g) button mushrooms, diced
  • 1 cup cooked rice (preferably day-old)
  • 1 tbsp soy sauce
  • 2 tbsp ketchup

Omelette:

  • 3 large eggs
  • 1 tbsp milk
  • A pinch of salt
  • Ketchup and parsley (optional) for garnish

Instructions:

  1. Prepare the Filling:
    • Heat 1 tbsp of vegetable oil in a large pan over medium heat. Add the green onion and onion, and cook until fragrant.
    • Add the carrot, meat or veggies, and mushrooms, and cook for 3-4 minutes.
    • Add the cooked rice, soy sauce, and ketchup to the pan. Mix well to combine, ensuring all grains are evenly coated.
    • Transfer the rice mixture to a small bowl and press gently to shape. Place a large plate over the bowl of rice, hold it in the centre, and carefully flip to create a dome shape.
  2. Prepare the Omelette:
    • In a bowl, whisk together the eggs, milk, and a pinch of salt.
    • Heat the remaining vegetable oil in a non-stick skillet over medium heat. Pour in the egg mixture and lightly scramble until the eggs are about 80% cooked through. Remove from heat.
  3. Assemble the Omurice:
    • Cover the rice dome with the egg omelette.
    • Garnish with ketchup and parsley, if desired.
    • Serve immediately and enjoy your homemade omurice!

Notes:

  • Day-Old Rice: Using rice that's a day old allows the grains to lose some moisture, resulting in the ideal texture for fried rice. If using freshly cooked rice, adjust the water-to-rice ratio slightly by using less water.
  • Protein Options: Feel free to select your preferred protein, such as ham, chicken, beef, pork, or tofu, for the dish.
  • Vegetarian Version: Replace the protein with extra vegetables in the same proportion. Popular additions include zucchini, red or yellow bell pepper, edamame, broccoli, and cabbage.

Omurice often appears in anime, particularly in scenes with romantic undertones. This tradition might be due to the custom of writing messages or names on the omelette with ketchup, making it a charming way to express affection.
